Geste basically means gesture in French, but at this viennoiserie refers to a concept ofAlain Passard's which roughly translates to an idea of "the beautiful hand."

"Over time, the hand becomes more and more beautiful, superfluous gestures are eliminated," Passard once said. "Like painters, you have to become real creative: erase the hand, erase the gesture."

The result is a classic croissant with a crispy exterior and a moist interior, buttery flavour packed into every layer of firm, chewy pastry.

A pain au chocolat ($3.75) is also quite classic, formed into a perfect roll with a crackly surface and stuffed with a nice amount of decadent chocolate.

An orange marmalade croissant ($5) takes the creativity factor up a notch, regular croissant dough layered with orange croissant dough and stuffed with a sugary scratch orange marmalade, topped with a sticky-sweet orange gel and chunks of candied orange peel.

A raspberry cruffin ($4.50) is just one of their unmissable line of cruffins, croissant dough folded into a muffin tin and filled with raspberry jam, topped with freeze-dried raspberry dust.

A Nutella cruffin ($4.75) has Nutella inside and is topped with a sturdy hazelnut ganache.

A s'more cruffin ($4.50) on special is sinful, chocolate lava cake dough in the centre layered with marshmallow sweetened with honey and topped with a dense chocolate ganache.

Vegan croissants ($3.50) are nut-free and soy-free, made using a vegan pastry margarine.

The only coffee on offer is a one-size cup of drip ($2.50), but if you're only going to have one option for coffee it seems that rich, toasty espresso from localFirebatisn't a bad choice. Bags of beans are also on offer for $18.

They've also got kouign amanns, savoury croissants and other creations, but you'll just have to pop in to see what's on offer from the constantly rotating selection at this micro-bakery.
